Hidden behind a bead curtain inside the Sushi Masters restaurant in Vilnius, Omakase by Vaidas Užgerys is one of the most intimate dining experiences in Lithuania. No more than 12 guests take their seats at the counter for an evening that spans 16 courses – snacks, sashimi, and nigiri – over the course of three hours.
Omakase translates from Japanese as “I leave it in your hands” – and that is precisely the spirit of the experience: the menu remains unknown until the guests have arrived. The chef composes it in the moment, drawing on the finest seasonal ingredients alongside his own experience and creative instinct. After presenting the evening’s produce, Vaidas and his team prepare each dish in full view of the guests. Every course has its place and purpose within the whole – because omakase is not simply a meal, but a carefully sequenced gastronomic journey.
Vaidas Užgerys has been honing his craft in Japanese cuisine for over 15 years, and holds the distinction of being the first Lithuanian to compete at the World Sushi Cup Japan.
