Pievos
The menu changes every few days, driven not by a fixed schedule but by the mood in the kitchen and whatever local farmers are offering that week. Edible plants and flowers feature prominently – some foraged, some grown by the team itself – and the dishes are always colourful, wholesome, and satisfying. While the cooking draws on modern European influences rather than any single culinary tradition, the ingredients are resolutely local.
Drinks receive particular attention: the selection spans wines, champagne, and spirits, alongside an exceptionally wide gin collection and the restaurant’s signature cocktails.
Open since 2021 and led by chef Dominykas Baronas and restaurant manager Kristina Kasikauskienė, Pievos was named one of the 30 best restaurants in Lithuania in 2025. The space also houses a coffee corner, a dessert counter, and a flower and interiors shop – which goes some way to explaining why many guests find themselves returning here more than once during a single stay in Birštonas.
